Cuban

Made lovely Asian pork tenderloin last night. How to use leftovers? Cuban sandwich. 



I don’t have a panini press so I improvised. 



The key (and I have messed this up a lot) , is to get pork hot and toast it slow. Turned out great. Pork, ham , white cheese, dill pickle and a spread made from mayo and mustard mixed. Black bean and corn salad on the side.
